To Work, or Not to Work? That IS the Question.

So for those of you who don’t know – I was laid off during my pregnancy and have been fortunate enough to be collecting unemployment since last spring.  It’s given us a chance to work on paying down some debt without me having to try to find something while pregnant, or as soon as Miss Magdalene was born.  With a few months of that unemployment left I’ve been trying to figure out whether or not I want to go back to work…

Part of the requirement for my unemployment benefits is that I apply for two jobs a week.  Since Magdalene is getting a bit older and my one year will be up soon, I’ve been taking that pretty seriously.  Today I applied for a job that I would be a perfect fit for – and within 5 minutes the hiring manager had e-mailed me back, asking me a few questions about my experience and inviting me in for an interview tomorrow afternoon.

At first I was excited that I still had it – and then I broke down and started crying.  Magdalene is 14 weeks at the moment.  She’s rolling from back to front and trying feverishly to roll from front to back.  She’s discovering her tongue and makes me laugh insanely every day…  The job is 40 minutes from my house making an hour and a half of drive time every day plus the 9 hours I’d be in the office…  So I’d be gone for 10 1/2 hours every day when she’s maybe awake from 7 am – 9 pm?

I don’t know if I can do it.  Not for $15.00 an hour.  For what?  So we can keep Direct TV once my unemployment is up?  There has to be a better solution.  If you have one, I’d love to hear it!

The Need to Write…

Alright ladies – yes, I know.  It has been MONTHS since my last blog post.  Why?  Because the third trimester really IS the worst, and the fourth trimester (the first three months after the baby is born) consists of eating, sleeping and taking care of baby.  At least it did in my case.  So as I sit here and Miss Magdalene is sleeping I have decided that for my sanity I really need to start blogging again.  I know you’re excited, you don’t have to hide it.

First things first ~ it has become glaringly obvious to me that being a mom is a completely different job and experience than being a dad.  Don’t get me wrong, Jayson is a great dad – but his job is nowhere near as detailed as mine.  He doesn’t have to care about the color of her poop, or the last time she ate, the fact that she hasn’t napped in the last 4 hours…  It’s just “what can I do to make the baby giggle?” and “she’s crying so maybe she needs a diaper change”.

Anyway – this is me, promising to start writing again so stay tuned!

The Crockpot Continued… Easy Recipes for Your Family

Alright ladies, as the summer approaches and things are sure to heat up in your kitchen, why not continue to find new and inventive ways to use that crockpot and avoid turning on the oven and heating up the house?

Don’t forget that for easy cleanup you can throw a crockpot liner in before for no mess after.  Enjoy!

1. ~ Hamburger & Potato Soup ~

You will need:

  1. 1 1/2 lb. Hamburger
  2. 1 lg. clove of garlic
  3. 1/4 tsp. pepper
  4. 1/2 tsp. thyme
  5. 6 med. potatoes
  6. 2 lg. onions
  7. 1 can cream of mushroom soup (I use chicken due to a mushroom allergy)
  8. 1/2 c. water

Cook beef and garlic in skillet until lightly browned.  Stir in pepper and time.  Peel and slice potatoes and onions.  Put 1/2 potatoes and onions into a buttered crock pot.  Add browned beef and top with remaining potatoes and onions.  Mix soup with water and spread over top of contents.  Cover.  Cook on low for 8 to 10 hours or on high for 3 to 4 hours.

~ Again ~ spices are not a necessity, they’re more like a recommendation in my opinion.  But if you keep running into something that you don’t have, make sure to pick up a small container the next time you’re at your local grocery store so that you have it on hand.  No need to make one giant spice run and blow your whole grocery budget!

2. ~ Ground Beef & Veggie Casserole ~

You will need:

  1. 2 lg. potatoes, sliced
  2. 2 to 3 med. carrots, sliced
  3. 1 can of peas, drained
  4. 3 med. onions
  5. 1 1/2 lbs. ground beef, browned
  6. 2 stalks of celery, sliced
  7. 1 can cream of tomato soup
  8. 1 soup can of water

Place layers of the vegetables in the order given in the crockpot.  Season each layer with salt and pepper.  Put the lightly browned ground beef on top of the celery.  Mix the tomato soup with the water and pour over the layers.  Cover and set on low for 8 hours.

~ Notice how these recipes typically don’t have more than 8 ingredients?  Pretty nice right.  Go ahead and give this one a try by prepping all of the ingredients the night before.

3. ~ Pizza Potatoes ~

You will need:

  1. 6 med. potatoes
  2. 2 lg. onions
  3. 1 lb. smoked sausage
  4. 1 tsp. salt
  5. 2 (8 oz.) can’s pizza sauce

Peel potatoes and cut in half, place in crock pot.  Cut smoked sausage into pieces and place on top of potatoes.  Chop onion.  Pour pizza sauce on top, cook in crock pot until potatoes are tender.  Again, on low this is something that can sit at home while you’re away.

4. ~ Teriyaki Chicken ~

You will need:

  1. 3 lg. frozen chicken breasts with the ribs still attached (or thighs)
  2. 1 can (16 oz.) of pineapple chunks, partially drained
  3. 4-6 oz. of Kikkoman teriyaki sauce
  4. Add vegetables that you desire (broccoli, snow peas, zucchini, squash)

Place chicken breasts in crock pot, with meat facing out.  Dump in the pineapple, add teriyaki sauce and veggies.  Cook on low for 6-8 hours.  Serve over rice.

Don’t forget about that microwavable rice cooker we talked about before!

Transition Into Motherhood… Scared Senseless.

I never realized (until this weekend) that there are times when I just don’t need to know things.  I have been dealing with pregnancy the best I can and I’ve really been excited about what to come.  Until I sat through a 3 hour Transition Into Motherhood class this weekend at Carolina’s Medical Center.  I have to tell you ladies…  I learned some things that I really could have gone without knowing.

Before now the only thing I had been dreading was labor.  As many of you know my heart really is all into having a natural and non-medicated birth.  Who wouldn’t be scared about that?

But now that’s not what I’m scared about at all.  As if I’m not already terrified of staying the night at the hospital let’s just get me all sorts of prepped for everything I’m going to experience those first few days after labor.  I’m convinced I would have been better off not knowing…  Anybody else ever feel this way?

I don’t need to know WHY I’m going to bleed for a few weeks after Magdalene gets here.  I don’t really think I’m going to remember in 11 weeks that when I pee I need to lean forward so it doesn’t run back towards any stitches…  Don’t really think you needed to tell me that I’m going to be subject to my husband’s cooking for the first couple of weeks.  I think that is the part I could have gone without knowing the longest.

Poor guy.  In case you haven’t noticed by now, I like good food.  So does my husband.  Hence why I do all of the cooking at our house.  *Sigh*  But yeah, I can understand how breastfeeding every 2-3 hours and having a baby who literally needs something from me every 7-14 minutes would make cooking difficult but does that mean that I shouldn’t try?  I guess we’ll find out, won’t we?

3 Hour Glucose Test… *sigh*

So I know that I will sit here and get up on my soap box and tell you all that you aren’t doctors and you should contact them for anything that seems off but damn it…  I failed my O’Sullivan test with a level of 150 this week and I’m angry.

According to the directions I needed to fast for two hours before arriving to take the test.  So what did my dumb butt do?  Yes, I ate an entire package of pop tarts thinking that was one serving and only 16g of sugar.  Well…  First things first, one serving of pop tarts is just ONE pop tart.  Not both.  Secondly, if you’re going to PUMP ME WITH SUGAR and the normal range after you’ve eaten is 120-180…  how do you expect me to be lower than a 135 an hour after you pump me with said sugar?

So rule number one – don’t eat before your O’Sullivan test ladies, no matter how early you get up to do so.  It’s just a bad idea.

Rule number two – stay away from carbs and starches and all of those nasty things that turn into sugar the night before.

…  Rule number…  Nope, I don’t have another rule.  But if anybody has any suggestions for what I can do while stuck at the hospital for three hours on Wednesday…  I’d sure appreciate it.  Ugh.

Is it bad that I’m hoping they’ll prick me at 1 hour, it will be below 135 and they’ll let me go home?  Do they do that?  Yeah, I’m doubtful.

Discount Stores Or Bust!

So I decided today that instead of heading to my usual grocery spot, that I would head to a generic store instead.  Amazed at how much I was able to buy for under $50, I decided that I would come home and “price match” to see what I would have spent at my normal store for the same exact loot, same quality.  The only difference being “brand name”.  The results might scare you…

The prices you see above from the brand store include items that are on sale, as well as with my discount rewards card.  Crazy, right?  Now I understand that not all discount stores carry a great selection of produce (this one happens to) or that it may not be in a good neighborhood…  But isn’t cutting your grocery bill almost in half worth finding the right place?  Until next time…

An Epidural? No Thank You.

Whether or not you’re terrified of needles, an epidural is something that needs to be researched and discussed with your SO and your OB GYN.  I’m honestly sick and tired of people looking at me like I’m bat $hit crazy when I tell them that our birth plan currently has a drug free labor written all over it.  It’s a personal decision that every woman gets to make, but please keep that in mind, it’s YOUR decision.  Women in this country delivered PLENTY of babies before the “wonder drug” was introduced but now it’s like it’s just “expected” and the “norm”.  Those of us who want to try this thing out naturally the way it was intended?  Well clearly there is something wrong with us.

So let’s talk first about the pros and cons of getting an epidural…  Some fact and some completely and totally my humble (yeah, right) opinion.

CONS:

Women who take the juice have a higher chance of needing emergency procedures to deliver baby.  This may be anywhere from forceps and vacuum extraction to an emergency c-section.

Women who have epidurals experience more tearing than women who don’t opt-in to the epidural frenzy.

Side effects for mom include: low blood pressure, headache, fever.

 

PROS:

Minimal or no tearing

No drugged out baby or mom

Less recovery time

More instinctive pushing = less pushing

You see where I’m going with this right?…  I thought so.

But I’m not naive enough to think that it will be all sunshine and rainbows either.  It’s a preparation that not every woman has the time, energy, or patience for.  I’ve read many instances where they call it “Marathon Mode”…  Not exactly a walk in the park.

So if you’re like me, and you want to forego the drugs and do it the old fashioned way…  START PREPARING NOW!  I don’t care if you’re 12 weeks, 20 weeks, or 30 weeks along.  It’s time to buckle down and get serious so that you can make it through this thing drug-free as planned.

Walk as often as you can.  Spend at least 30 minutes EACH DAY being active.  Whether it’s pilates, yoga, a stationery bike, walking the dog…  Just get out there and do it.

Eat right.  Keep your body in shape by eating right.  Making sure that you and your baby are getting the right kind of calories and nutrition is a huge key to this.  I’m not telling you I don’t have the occasional bowl of ice cream, but I’m definitely doing a bit more than the pizza and popcorn that my mom had to have constantly when she was pregnant for me!

Practice relaxation techniques.  Are you getting cramps, Braxton Hicks contractions or just in overall discomfort?  What a great chance to practice relaxing!  Breath through the pain.  When my back is really starting to bother me (which happens frequently thanks to the nice bulge on my sciatic nerve…) it’s a great chance for me to practice relaxing, rather than tensing up to get through the pain.  Go on, we’re fat and uncomfortable, you have plenty of opportunities to start working through it now.

I think the most important thing (for me) is remembering that this has been going on for over 2,000 years and that regardless of my fears ~ my body was built for this!  So of course it can handle it.

Safe Crib?

If you’re anything like me, you’re constantly reading the baby magazines, the how-to guides and whatever other information you can get your hands on to ensure that you’re doing everything you possibly can to bring your baby up “right”.  Let’s be honest, while there is no “right” it’s nice to know you’re doing everything you can to keep your baby safe and healthy.  So stealing (literally) a page out of American Baby, let’s discuss the five SUPER SIMPLE tips to creating a safe crib:

  1. Buy It New!:  Yes, we are all trying to save money but just like car seats, this is one of the things that you should not purchase second hand.  “Some used cribs have traditional drop sides, which don’t meet the latest safety standards, or they may have faulty or missing parts.  If you do accept a hand-me-down, check to see if it’s been recalled, then inspect it.  Broken?  TOSS IT.”
  2. Test The Mattress:  “Make sure there’s only a slight indent – or none at all – when you press on it gently.  You also don’t want more than two fingers’ width between the edge of the mattress and the side of the crib.  The mattress pad and crib sheet should fit tightly.”
  3. Place it Away From Windows:  Regardless of whether or not you live in an area where storm damage is a risk, placing your crib away from the windows is important for a number of reasons.  “Cords, blinds, and drapes pose a strangulation risk.  Plus, it could be drafty near windows during cool months, or hot and bright in the summer.  Keep anything with cords out of the crib and off any surface where Baby can reach them.”
  4. Skip the bumpers:  Turns out ~ the risks far outweigh the positives of these cute crib accessories.  “People used to think they prevented minor injuries, but the risk of suffocation outweighs any potential benefits.  Bumpers also obscure your newborn’s line of vision so she can’t explore the room with her eyes while she’s chilling out.”
  5. Go Bare: Skip the fluff.  “Stuffed animals, blankets, and pillows should never enter the crib.  A mobile is fine, but keep it high enough so your infant can’t reach it while lying on her back, and be sure to remove it as soon as your sweetie is able to push up onto her hands and knees.”

It’s Time For Thank You Cards…

The shower is over, the gifts are unwrapped, you’re no where near unpacked and it’s time to send thank you cards.  If you’re like me, you purchased your thank you cards at the same time as your invitations so that they have some semblance of matching.  But thanks to a tip from my momma, we went one step further.

We took the envelopes from my thank you cards and set them out at each guest’s spot almost like place cards.  When the guests arrived, we asked each of them to write their name and address on the envelope.  This was SO NICE because now that it’s time for me to do these nasty little hand written thank you cards, I don’t have to go back through my list and find everyone’s address, nor do I have to write out the envelopes!  So thanks mom!

Hopefully when you were opening all your gifts you were going slow enough to allow the person writing everything down enough time to figure out what it was you were opening and who it was from before moving on to the next gift.  So now you’ve got that nice list, and envelopes written out and it’s time to get to work.

Be gracious and to the point.  For some thank you cards, it was literally the first time I’d seen some of my family in 10-15 years…  Those ones will be a little more personal.  As will the one to my mother and step mother who really spoiled Magdalene rotten.  Most cards however will be very short and to the point ~ and that’s okay.  A “it was great to see you…  thank you so much for the…  <3 you” will suffice just fine!

IF SOMEBODY MADE YOU SOMETHING HAND MADE?!  Take the extra time that they took to thank them properly!  Those are one of a kind items that no other child will have!  Just my $0.02!

Prepping For Baby Travels ~ Diaper Bag 101

Okay, so I knew that when I got pregnant that I had a long year ahead of me.  I knew that there would be the challenges of pregnancy, prepping for baby and the obvious factors of the life changes that come when she finally arrives.  I think that the part I was least prepared for was prepping for baby.  Can you say exhausting?  I’m honestly not sure how I would find time to do it all if I was still working 50+ hours a week!

My first baby shower occurred last weekend ~ it was a bit early so I could make the trip with no issues.  My dining room is over run by receiving blankets, outfits, toys, diaper bags, diapers and the lot.  My nursery will not be finished for another two weeks or so and regardless of that ~ none of the furniture will arrive until the end of next week at the latest.

So I have been spending my hours washing clothes and organizing items.  I’ve even got a diaper bag packed up and ready to go…

So let’s talk about what goes in a diaper bag ~ shall we?  First you’ll need to think about the purpose of the bag you’re packing:  How far from home are you going, how many meal times will you miss, how long will you be gone, how easy will it be to cut your journey short?

So here’s the basic diaper bag packing:

Diapers: One per hour you’re expecting to be gone

Small Bags:  To dispose of dirty diapers!

Baby Wipes

Changing Pad

Here’s something that I found that allows you to put all four of the above items together so you don’t need to dig through the bag to find everything you’re looking for:  Fisher Price – Travel Care Deluxe Diaper Changer.  It even comes with 25 small bags to get you started so you’re not stinking up your best friend’s trash can…  Alright, let’s continue.

Burping Cloth

Pacifier: If you’re baby uses one

Change of clothing: Both for baby and mom, just in case!

Blanket

Any medicine your child may need ICE (In Case of Emergency ~ Tylenol, Benadryl etc.)

Feeding Supplies:  If you plan to breast feed, this may be as simple as the cover for privacy but if not, make sure you have enough formula and several clean bottles to last the duration of the time you expect to be away from home.

If you’re leaving the baby and bag with someone else for a while, make sure you have a list of the important info: your contact information, the pediatrician’s contact info, allergies, immunization records etc.

We’ll get into some more organizational steps later but for right now, this mama to be needs a nap!

I’m Baaaack…

Hey ladies,

Sorry I’ve been gone so long.  I took an extended trip back to my home town which lined up nicely with my baby shower and I had no idea that I was going to be too busy and too tired to write.  I hope you’ll forgive me.

But anyway ~ I’m back and have some good stuff coming up for you in the next couple days encompassing what I hope will include baby shower photos, the stress of reading up on how to be a good parent, different education methods, sleep schedules, sign language and more…

Plus some registry/baby shower advice for those of you who it’s not too late for.

That’s all for now as I’ve got to get dinner on the stove and laundry in the dryer…  I’m even going to attempt to get started on my thank you cards.  I hope you all had a great end of May and thanks for reading.

The Crockpot… More Than Wasted Counter Space

I don’t know about you, but my crockpot was one of the first gifts that was purchased for me when it was time for me to move out into this big scary world on my own.  For a while, it really just sat in the cupboard.  At one point ~ I decided it was time to start using it ~ and then it just took up space on the counter.  The truth is we are all busy.  Whether we’re stay at home mom’s, students, full time employees or a combination of any of the hats us women wear now a days ~ there aren’t always enough hours in the day to get everything done that we need to, and still provide our family with a nutritional dinner on the table each evening.

So why not fully utilize the crockpot, and all of its amazing glory?

I’m going to highlight for you some of my crockpot favorites so you can see how easy it all really can be.

1. ~ A Basic Pot Roast ~

You will need:

  1. 1 bag mini carrots
  2. A roast (any top of bottom or round roast)
  3. 4 potatoes, cubed
  4. 1/2 an onion, cubed
  5. 2 cups beef broth (again you can use cubes)
  6. Garlic Salt & Italian Seasoning

Put the roast in first, cover and surround with potatoes, onions & carrots.  Add beef broth, and seasoning.

If you do this first thing in the morning, cook on low all day.  Meal will be ready when you are.  If you’re making it later in the day, put it on high for the first 3 hours and then turn it down.

2. ~Beef Stew~

I want to provide you here with a quick disclaimer.  DO NOT GET DISCOURAGED if you do not have all of the ingredients that are required in a recipe.  If you don’t have garlic powder?  It’s not the end of the world if you use salt.  Don’t have a bay leaf?  Season your dish up with some italian seasoning or parsley.  Just wing it!  Winking smile

  1. 1 bag mini carrots
  2. 3 potatoes, cubed
  3. 2 lbs. beef chuck, cubed (in a lot of butcher departments you can find this done for you)
  4. 2 cups water
  5. 2 beef bouillon cubes
  6. 1/2 tsp garlic powder
  7. 1 bay leaf
  8. salt & pepper
  9. 2 onions, chopped
  10. 1 rib celery, sliced
  11. 1/4 cup flour
  12. 1/3 cup cold water

Combine all of the ingredients except the flour and cold water.  Mix well.  Cover and cook on Low for 8 hours.  When it’s time to eat, dissolve the flour into the water and stir into the mixture.  Turn the crockpot on high and cook for about 10 minutes, or until thickened.  Enjoy.

3. ~ Beef Stroganoff ~ I love this recipe because I can exclude the mushrooms and it’s no longer deadly (yes, I have a mushroom allergy, weird, I know).

You will need:

  1. 1 lb. round steak, cubed
  2. 1 Tbsp. shortening
  3. 1/2 cup chopped onion
  4. 1/2 cup chopped celery
  5. 10 3/4 oz can cream of celery soup
  6. 4 oz can mushroom pieces, drained
  7. 1 cup sour cream
  8. 1/4 tsp garlic salt

If you’d like ~ you can brown the meat in the shortening in a saucepan prior to cooking.  If you do so, add onions and celery and saute until they’re tender.  Them combine all of the ingredients in the slow cooker and get on with your day.  I recommend serving over hot egg noodles, but this is your kitchen.

4. ~ Reuben Sandwiches ~

You will need:

  1. 1 lb. can sauerkraut (fresh if you can get it, mmmm!)
  2. 1 lb. sliced corn beef brisket
  3. 1/4 lb swiss cheese, sliced
  4. Sliced rye bread
  5. Thousand island dressing

Drain the sauerkraut until it’s very dry (use paper towels to absorb the moisture) and place in the bottom of the slow cooker.  Arrange a layer of corned beef slices over the sauerkraut and top with cheese slices.  This one you’ll want to cook on low for 4 hours.

When dinner time is upon you, simply toast the bread and spread generously with the thousand island dressing.  Spoon ingredients from slow cooker onto the bread maintaining the different layers ~ and enjoy!

Ask Your Physician!

I don’t know about you ~ but being 25 and having grown up in the age of technology, I depend on Google for everything.  It’s hilarious because my parents are stuck with these horrible old cell phones obviously because they refuse to pay for the data packages that they don’t see a need for.  My Father went so far as to tell me a few weeks back that the only people who need a smart phone are traveling salesman, and people who are on the road for their job constantly.  I couldn’t help but laugh.

I know what you’re thinking ~ how old are your parents?  Well, they’re only 46 and 49 ~ they just grew up in a completely different time, in towns smaller than most of you can imagine.  Any time you call my mother ~ it will tell you that her voicemail box is full… because she refuses to waste her minutes checking voicemails.  I keep trying to explain that she can do it over nights and weekends, or that I can even do it by calling her…  It never changes.

And so we have become a generation obsessed with having the answers at our fingertips.  Which has obviously led to another issue.  Googling of symptoms, self diagnosis and self medication…

I’m not going to sit here and tell you that I am not guilty of it, or that based on my readings (not the recommendation of any Pediatrician I have talked to) that I won’t be vaccinating my baby the day she leaves the womb.  But how often are we using the “opinions” of uneducated forum junkies to determine that a medical issue is completely normal ~ and does not need medical attention.

I had my 25 week prenatal appointment today.  After reading everything I could find on contractions, I am still really struggling with the concept of what they will feel like.  He started talking about them and I came out and said “Can you please explain to me what a contraction is supposed to feel like?”.  He just chuckled.  Apparently when I feel it, I will know.  But he did give me a better understanding of where I will feel it ~ as well as what to look for when it may be time to get to a hospital.  Another thing that I had been reading about on the forums was a lot of women that are due at the end of August are already experiencing leakage from their breasts.  Having not experienced this, it kind of made me concerned.  I felt 100% better when he advised me that it was actually the norm for it not to be occurring at this stage in the game.

My point really is that yes, there are people out there who have been through it many times.  They will be able to offer you some great advice and opinions.  However PLEASE keep in mind that it is just that.  Advice and opinions.  I am the first one to give both but I always start off my sentences with “based on what I have read” and end it with “but I would definitely ask your Dr. at your next prenatal appointment”.  That’s what they’re there for.  Why not take advantage of it?

Okay, so now that you have your budget set ~ it’s time to make a payment schedule to prevent you from paying bills after their due, or running out of money before you get paid again.  First things first:  Determine how many times you will get paid in a billing cycle.  Do you get paid monthly, twice a month, weekly, or every two weeks?  How often do you want to pay your bills?

Based on the sample budget I created in my earlier post, I’m going to show you two ways to set up a payment schedule.  One is really more helpful for those of you who are already on track, and the second is for those of you who need to get caught up on bills, and see your balance at the end of each pay period.

Let’s get started!

Open up your budget.  If you’re in Excel then create a new tab titled “schedule”.

You’ll want to copy your monthly operating budget into this tab so that you can create your budget.

With the first method I’m going to show you quickly how to balance it, and then I’m going to show you how I keep track of everything on a month to month basis.  I will assume that you will pay your bills twice a month.  Let’s say the 10th and the 25th.

In our sample budget, our total operating was $2,600.00.  This means we will want to break up payments on the 10th and the 25th to be as close to $1,300.00 as possible.

Mortgage $ 1,000.00

Utility #1 $ 50.00

Utility #2 $ 50.00

Utility #3 $ 100.00

Savings $ 250.00

Auto Payment $ 250.00

Auto Insurance $ 100.00

Auto Savings $ 100.00

Gasoline $ 200.00

Groceries $ 300.00

Clothes/Hair $ 100.00

Entertainment $ 100.00 

Based on these numbers let’s assume that your mortgage and utility #1 are due on the 1st of the month.  Let’s say Utility #2 is due on the 15th, Utility #3 is due on the 14th, your Auto Payment is due on the 17th and your Auto Insurance is due on the 10th.

Look at how I created the chart below to line those items up so that they will be paid on time.  You’ll then notice that I added all of your savings transfers to the beginning of the month (the payment date with less moneys going out) and split your expenses that are meant to carry you through the month.

If you’re not confident with paying less in the beginning of the month, I recommend putting your entire entertainment and clothing/hair budget in an envelope in the beginning of the month to make everything an even $1,300.00.

Now onto keeping track of this every month:

The first three columns will be exactly the same, so copy those into a new spreadsheet titled X Month 2012.  Create the following columns:  Day Paid, Actual Amount, Variance.

What does that mean?  You’re not always going to pay a bill on the day that it is due.  By seeing what day you pay a bill each month, it allows you to know A.) when you should pay it again and B.) whether or not you’re making payments on time.  Actual amount ~ this one is a bit obvious.  While your budget number is pretty close, your utility bills are not going to be identical each month.  This is why we keep track of how much we actually paid, and then the variance.

You can fill it in just like I have done below.

To get caught up, you will still need to follow the initial steps above of getting your schedule set, you’re just going to need to do things a little bit different in the tracking section.

Create a new spreadsheet titled Running Balance.  This is going to have a section for each paycheck you receive.  Let’s say you start this when you get paid this Friday, May 18th.

Your first line will be May 18th.  Under the date you will put beginning balance.  To the right of that, put in your actual beginning balance before you got paid.

Next line: Paycheck.  Type in the amount you got paid (in the same column as your beginning balance.  After that you’ll want to put in everything you’re paying from that and two columns over the amount you spend.  You’ll end that section with a Checking balance column which you will see in my example below.  It’s up to you to figure out how to pay things to get caught up, whether you leave your savings funds alone for a few months so that you can use that to pay your mortgage the week before it’s due instead of later in the month where you may incur a late fee.  Here’s an example.

So, as you can see above: Our sample is paying May’s mortgage at the end of the month, undoubtedly hitting a late fee of at least $40.  There isn’t a lot of wiggle room in the budget to begin with, and those unnecessary fees can really kill it for you.  So what do you do?

Here’s where a bit of planning comes in.  If you’re one of those people who gets paid every Friday, you can look ahead and see that June is one of those months where you’ll be getting that extra paycheck.  That’s $650 right there to help you get on time on your mortgage.  You would still need to make that payment at the end of the month in the full amount, but then you would also put that extra $650 towards your mortgage as well.  That way August’s balance is more than half paid for.  In August if you think you can, you could not put any money into either savings, and you’ve found the other $350.  Pay that extra towards your mortgage and when you make that payment at the end of September?  It will actually go towards October’s mortgage instead of being late for September!

Anybody notice the weight on that thing?!  Fortunately it is super easy to handle, easy to adjust, easy to put car seat in base and stroller…  Long story short the thing handles like a dream.

We put it together and we were practicing putting it in and out of the base and in and out of the stroller…  It was absolutely hysterical.  The base shifts into three different positions, and has a level on it to make sure you haven’t installed it improperly…  So far I absolutely love it and can’t wait to test it out with the Maggie!

Thank God That’s Over…

As you may have figured out by now ~ I am an extremely passionate person when it comes to things that I care about, as well as the things that I believe in.  That being said ~ most of the time when it doesn’t affect me or my believes, I am completely content walking in the other direction.  I would not make a very good politician, because I honestly just don’t have a view on every topic.

For those of you who do not live in North Carolina, Tuesday was a very controversial day in our state.  We were charged with voting on an amendment that would add the definition of marriage between a man and a woman to our state’s constitution, as over half of the country has done already.

Keep in mind that gay marriage was already illegal in the state of North Carolina.  Based on what I have read (I am not an expert) it is my belief that the politicians of NC wanted to add this amendment so that the law could not so easily be overturned.  But let’s talk about what it turned into…  Many 40+ page papers were published ~ never to include the full text of the amendment ~ claiming that it would harm children ~ allow gays and unmarried couples no protection against domestic violence ~ break all private agreements regarding domestic insurance arrangements, wills etc.

People were outraged.  The funny ~ no the saddest part in my opinion ~ was that the amendment text (which was never included) very specifically stated that it would have no affect on private agreements whatsoever.  This amendment would not take away the responsibility of a parent to provide health insurance to their child, it would not in any way change agreements between employee and employer and it certainly would not prevent the police from responding to a domestic abuse call because the co-habitants were not married.

People never bothered to get the facts.  They just saw “what it would do” and started throwing out words like hatemonger, bigot, redneck…  It doesn’t even matter what side of the issue I’m on ~ it is disturbing to me that I am weeks away from bringing a miracle into this world in the form of a little girl ~ and that she will be subject to such idiocy amongst a society who finds it unheard of to think for themselves.

According to Wikipedia ~ Bigotry is the state of mind of a "bigot", a person obstinately or intolerantly devoted to his or her own opinions and prejudices, especially one who exhibits intolerance or animosity toward members of a group.

Weren’t those opposed to the amendment acting in this state of mind?  To be intolerable of the group of “rednecks” and “bigots” who survive another generation?

You cannot truly know someone’s beliefs or motivations behind anything without having an intelligent conversation with them.  If you don’t wish to do so ~ then keep your accusations to yourself…  That’s all for today.  It’s been a rough week.

Taco Tuesday!

Now that I’m home all day and left to my own devices ~ you would think it would be easier to plan out meals.  It’s actually gotten more difficult.  Though it may just be the fact that I can NEVER DECIDE what it is I want to eat.  And therefore I have implemented taco Tuesday.  And in celebration:  I’m sharing some of my favorite recipes with you.

We all know and love a basic taco…  So here goes:

Taco shells (the kind you toast in the oven)

One lb. Ground Beef

Roma tomatoes (diced)

Shredded Lettuce

Mexican Style Cheese

One Packet Taco Mix

Simple enough, right?  Exactly.  I always get my veggies ready while I’m browning the beef.  Then you add the water and seasoning as directed on the packet (your shells should be toasting this whole time) and voila!  Serve.  Quick, easy and deeelicious.

Warning ~ If your DH (Dear Husband) loves tacos as much as mine does…  one lb. of ground beef may literally only be enough for the two of you.  So adjust based on your family size.

Who doesn’t love a nice hot soup on a dreary or rainy day?  I have the simplest taco soup recipe and it’s absolutely amazing:

One lb. Ground Beef

2 cans kidney beans

1 can diced tomatoes

One Packet Taco Mix

1 cup of rice

tortilla strips, mexican cheese, chives and sour cream (if that’s your thing) to garnish.

In a pot combine 2 cans kidney beans, 1 can diced tomatoes, one packet taco mix and three cups of water.  Turn on low.

Brown your ground beef.  Add to your pot.  If you’ve read my previous posts ~ you know I like to cheat.  So here it comes again.  With the Pampered Chef Rice Cooker I cook 1 cup of rice while I’m bringing my soup to a boil, and simmering.

That’s all there is to it.  Put some rice in the bottom of a bowl, add your soup on top then garnish.

Next week I will be giving turkey fajitas a try.  You guessed it, simply frying up some turkey, peppers and onions ~ throwing some flour tortillas in the oven to heat up and serving with some type of bean, lettuce, tomato and cheese!  Have I mentioned my husband LOVES cheese and tacos?  I’ll talk to y’all soon!

Michael’s… A Non Crafty Person’s Nightmare

For those of you who don’t know me all that well…  I am not what you would call a crafty person.  That being said ~ with nothing better to do but sit on my butt all day, it’s clearly been in my sanity’s best interest to get a few hobbies.  Crocheting is great, but I cut up my finger pretty bad the other day (oh the joys of pregnancy brain) and therefore I’m taking a break.  I got in the car and wound up at our local Michael’s.

Clean up on aisle one?  So far I have only ventured into Hobby Lobby searching for crafts and no offense to you Michael’s lovers but…  after yesterday it seems I will be keeping to that trend.  Maybe your local Michael’s is different but mine was literally a mess of yarn, paint, scrapbooking supplies and wedding containers.  And even the wedding stuff wasn’t all put together.  I found invitations on three different aisles ~ it was an OCD person’s worst nightmare!

Eating for Two… How Much is Too Much?

I told you that some of these posts would be me getting up on my soap box, right?  Well ~ here it is ladies.

Early on in this pregnancy when I was spending a lot of time wrapped around my toilet bowl, I was also spending a lot of time on the Baby Center (BBC) forums to make myself feel a bit more normal.  The farther I get along in this pregnancy, the more I have stepped away from it.  Yesterday I think I realized exactly why this is.

I’m going to give you a fair warning ladies, you really may not like where this post is going.

Pregnancy weight gain…  It’s a pretty hot topic.  A license to eat, cravings, how much is too much and so on and so forth.

Yesterday after a woman came home from her 23 week prenatal visit, she posted a complete RANT about how ANGRY she was at her doctor for shaming her based on the fact that she has already gained over 30 lbs!  She felt that the doctor had absolutely no right to make her feel this way…

What did the rest of the women, also due in August tell her?  That it was COMPLETELY NORMAL and they were in the SAME BOAT and not to listen to her doctor…  Umm, excuse me?  When did you spend 12 years trapped in college hell to give that kind of advice?

By the end she felt 100% better and now thanks to some real idiots clearly has no intention of changing her habits.  Wow.

Here’s the thing…  I eat all the time.  I occasionally even snack out on ice cream and brownies and if you know me at all, well…  then you know I’ve eaten my fair share of potato chips and french onion dip.  So I’m BAFFLED to know what these girls have been eating to gain almost 3x the amount of lbs. that I have put on so far.

GET OFF YOUR ASS.

Yes, I know.  You go to work all day and sit in a cubicle and I don’t.  What is your point?  Get up and go for a walk on your lunch break instead of consuming everything you can fit on a tray at Arby’s.  Use those nesting feelings to your advantage.  Clean something.  Dear God women, are you serious?

I’ll get into the facts in a minute but I’m going to throw this out there one more time.  The fact that your mom gained 50 lbs with all four of her pregnancies and lost it within the year ~ IT’S NOT SOUND MEDICAL ADVICE.  Morons.

So, now let’s get into the actual reasons doctors recommend a weight gain over the whole 40 weeks that you’ve managed to successfully accomplish in half the time…  Congratulations to you.  Sensing the sarcasm?  Good!

By gaining too much weight during pregnancy, here are the complications for you and/or your baby:

Discomfort ~ Yes, even more than you were expecting.  As you continue to pack on the lbs. and not give you and your baby the nutrients you need you’re going to experience back pain, swollen ankles, leg pains, vericose veins, exhaustion, heartburn, hemorrhoids (my personal favorite) and all over aches and pains.  Sounds like a blast, doesn’t it?

Complications ~ Oy!  Here’s a thought.  Have you ever heard of gestational diabetes?  Guess what it’s treated with?  Diet and exercise.  Why don’t you get started?  Oh and guess what?  You’ve just doubled the risk that your child is going to be heavy.  Not only is this bad for obvious reasons later on, but with you and your child larger than necessary, if you can deliver vaginally at all?  Plan on your LO being removed with a vacuum.

On-going Health Issues ~ Hello.  Are you getting my point yet?  No?  That’s fine.  There’s more.  Just because your mom lost that 50 lbs?  You’ve just doubled the amount you’re likely to retain after baby is born.  “Women who gain excessively and don't lose the extra weight within six months after the birth are at a much higher risk of being obese ten years later. Obesity often leads to significant health issues, such as high blood pressure, diabetes, and heart disease.”

Dave Ramsey & His Baby Steps to Financial Freedom (4-7)

It’s time to pick up where we left off.  If you missed baby steps 1-3, you can find my break down of them here.  And please ~ feel free to completely avoid this post until you have completed steps 1-3.

And here are steps 4-7 ladies and gentle… ladies?  hehe.

Baby Step #4:

It’s time to invest.  At this point you have no payments with the exception of a mortgage.  No credit card bills, no automobile payments, nada.  As Dave says it’s “time to get serious about building wealth”.  Time to start putting 15% of your gross HOUSEHOLD income into retirement plans and/or Roth IRAs.

What is a Roth IRA?

“A Roth IRA (Individual Retirement Arrangement) is a special type of retirement plan under US law that is generally not taxed, provided certain conditions are met. The tax law of the United States allows a tax reduction on a limited amount of saving for retirement. The Roth IRA's principal difference from most other tax advantaged retirement plans is that, rather than granting a tax break for money placed into the plan, the tax break is granted on the money withdrawn from the plan during retirement.

A Roth IRA can be an individual retirement account containing investments in securities, usually common stocks and bonds, often through mutual funds (although other investments, including derivatives, notes, certificates of deposit, and real estate are possible). A Roth IRA can also be an individual retirement annuity, which is an annuity contract or an endowment contract purchased from a life insurance company. As with all IRAs, the Internal Revenue Service mandates specific eligibility and filing status requirements. A Roth IRA's main advantages are its tax structure and the additional flexibility that this tax structure provides. Why do you not want to put more than 15% in?  Keep reading.  You’ll want to have money left to complete the rest of the steps.

Baby Step #5:

First things first.  You need to have a goal.  You need to figure out how much per month (per Dave, at 12% interest) you need to set aside in order for there to be enough when it’s time to send your child (or yourself) off to college.  Google your options for Education Savings Accounts and 529s as this is the best way to save.  North Carolina has great options for both in-state and out-of-state college savings plans.

  • Savings bonds (only 5-6% growth)
  • Zero-coupon bonds. (only 6-8% growth)
  • Pre-paid college tuition (only 7% inflation rate)”

Baby Step #6:

Could you imagine being out of mortgage payments 5 years earlier than planned?  What about 10 years?  Don’t forget, at this point you have a solid savings fund with 6 months of your operating income socked away.  So now it’s time to pay down that mortgage.

At this point, you may even want to contact your mortgage company, and other companies to see if refinancing to a lower interest rate is an option for you.  Either way, it’s time to get to the point where you don’t have to remember to send that monthly mortgage payment.  What better way to do so than by eliminating it?

Baby Step #7:

Baby Shower 101

I am an event planner by nature.  Hospitality runs through these veins like water runs over Niagara Falls.  I’m that host that always does all of the cooking, and politely declines your request to bring something when I invite you into my home.  So as I’m sure you can imagine, letting others plan for me is a bit nerve racking.

That being said, I wanted to provide some tips for those of you who may be planning baby showers (for yourself, or someone else) in the upcoming future.  I hope you enjoy.

The Guest List

    • What is your venue?
    • How many people does it hold?
    • Is this shower for a specific audience?

These are all things to keep in mind when creating the guest list to your big day.  Of course, you will always want to over invite as you can usually expect 50-60% of the guests you invite to be able to attend.  Sometimes, if it’s a holiday weekend or such, it may be even less.  So don’t get discouraged.  Just be ready with lots of invitations.

The Menu

If you are having a baby shower at a restaurant, this in most cases will be taken care of for you.  You’ll need to figure out approximate attendance, which directly correlates with your budget, and then order food. 

If you’re not having it at a restaurant, you may still want to choose the catering option.

If you’re a DIY-er like I am, you’ll want to plan your menu.  If you are hosting for a picky mom to be ~ I highly recommend sitting down with her to see if there are any must-haves or food aversions before finalizing.  I know my mom is glad she did so.

Here are some of the highlights from the menu for my upcoming shower:

Waffle Fruit Bowls with Whipped Cream

And of course my all time favorite snack…  Bruschetta.  Nope, she didn’t have a choice.

We will be serving a heavy lunch so it will include ziti, scalloped potatoes and ham, veggies, and a meat/cheese tray.

Like I said, hospitality and fattening people up runs in our blood.  If this isn’t for you KISS it all you want to (Keep It Simple Stupid).  LOL.

So now that you have invitations, guests, and a menu ~ let’s get the rest of the details worked out.  Is there a theme?  If there is, start early to find plates, cups, napkins and decorations that go along with the theme.  If there isn’t, simply go for a color scheme.  Pinks or Blues are simple enough if you know what the sex of the baby is.  If you’re not sure, for whatever reason and you’re as averse to the color yellow as my husband is ~ pastel it up.  Or if your shower is near a holiday ~ get festive and use those colors.  Decorations will be super easy to find.

What is the game plan?  Do you have games set up for your guests?  Are you going to subject your mommy-to-be to the “guess how many sheets of toilet paper it takes to wrap around my belly”?  We will not be playing that one at my shower…  No ma’am.  I found these awesome books at the Dollar Tree in the party section for baby shower games that had 10 games for up to 8 guests.  Have 24 guests?  That’s all the games you need for only $3!  Either way, make sure you have a writing utensil for each guest.

What about favors?  There are so many ways to do this.  Google baby shower favors X.  The X can be related to your theme, it can be candy, it can be whatever the heck you want it to be.  Just remember, you don’t need to break the bank on this one.  People will just be excited to have a keepsake of the day!

Don’t forget that as the host you’ll need to have a notebook and pen on hand for when the mommy-to-be opens her gifts.  It’s your job to write down everything she received, and from whom ~ to make the task of sending out thank you notes as easy as possible.  Best of luck ~ and have fun!

Invitations, Announcements, Christmas Cards… Oh My

I will be completely honest with you ~ in the 6 years that my DH and I have been together, I’ve never sent Christmas cards or annual updates to anyone in our family.  We moved to NC 5 Christmas’ ago and haven’t been home for a single one.  Oops.  Well, if you’re like me ~ you’ve decided that it’s now time to change all of that.

Unfortunately, somewhere along the way ~ a computer crashed, and I lots all of the addresses that I had collected for our wedding, and had to start all over again.  So let’s start with the gathering of addresses.

First things first.  Start an Excel file with the list of all of the addresses that you need to collect.  This should include immediate family, aunts, uncles and your favorite cousins, any close family friends ~ it’s completely up to you.

Then start gathering addresses.  The best place to start is by contacting your parents and your in laws.  For any that they don’t have ~ if you have a general idea of where they live whitepages.com can be a great resource.  Message them on Facebook and ask them for their address, whatever you need to do to get that information.

THEN save the file to a dropbox.com account so that you will have the list and can make updates as necessary.  No falling victim to losing the file because it will always be securely stored on line.

Invitations:  If you’re working on invitations you’ll want to figure out whether or not there is a theme.  Then you’ll need to choose your words.  You’ll need to keep things in mind like who is hosting, who it’s honoring, if you want to give away the sex etc.  Also, it’s crucial to make sure that you include any pertinent information including where you’re registered, how they should RSVP, and any directions that your guests may need.  Get creative and have fun with these.  Then make sure to save one for the baby book!  You’ll want to keep it.

Birth Announcement:  The first thing you’ll want to do is choose the perfect photo.  Your LO doesn’t need to be dressed up in a frilly outfit or anything like that.  That being said, I wouldn’t recommend using the first photo your DH shot off either.  Just something cute that she’s them looking at peace.  This is another one where you’ll want to choose your words.  I use Google for all situations like this.  It’s where I found the perfect rhyme to ask people for a book instead of a card for my baby shower.  Be sure to include the details.  How big?  How heavy?  Date of birth?  Full name?  Then sign it from you and your DH so it has the personal ring to it.

Head to your post office to find the perfect stamp to match the time of year or event, and pop them in the mail.

Meatloaf, Yes Please.

This one is going to take a bit longer to cook because let’s face it, putting a meatloaf in the oven for 30 minutes is not going to lead to good things…  You don’t ever hear them asking “what temperature would you like your meatloaf” at restaurants for very good reason.  So here we go.

If you have a bread pan, that will work perfectly.  Otherwise you’ll have to form this one into a loaf and put in a deep baking dish.  No need to cover.  Start by turning your oven on to 375 degrees.

1 lb. Ground Beef (93/7)

1/2 lb. Mild Ground Italian Sausage

1/2 an Onion, Diced

1 Egg

2/3 cup Italian Bread Crumbs

Salt & Pepper

Combine all of the above ingredients in a large mixing bowl.  To properly mix the sausage into the ground beef you will need to mix this well with clean, ring free hands for several minutes.  When you can’t tell where the sausage ends, and the ground beef begins, you’re ready to form your loaf.

Pop this in the oven, set the timer for 30 minutes and go play with your LO, do some yard work, whatever.  You won’t need to do anything else until the timer goes off.

There are so many options for meatloaf, and I promise you that they can all be completed in the 20 minutes you now have left.  If you want to do something simple like canned green beans, and buttered egg noodles, when the timer goes off it will be time to start boiling the water for the egg noodles.  Once you add the egg noodles, turn the canned (or frozen) veggies on so they can get cooking.  Also, if you’d like to add a sauce to the meatloaf ~ something as simple as tomato paste, or even just coating it in a chunky Ragu you happen to have in the fridge ~ now is the time to do it.

When your sides are done, remove your meatloaf from the oven.  Let it sit so that you don’t have a big juicy mess when you cut into it.  Prep your sides.  This may just mean draining the vegetables, and draining/rinsing the egg noodles and adding butter.

Now you’re ready to serve.  Sounds simple enough, right?  I promise you it is.  Enjoy!

Saving For Maternity Leave?

Something that I read the other day in American Baby absolutely shocked me.  42% of new moms will be taking unpaid maternity leave.

As you may already know by reading previous posts, I recently lost my job and will be collecting unemployment through the end of my maternity leave.  Before that I would have received 4 weeks at full pay followed by another 8 weeks at 60% of my pay.  Even that was going to cause us to do some scaling back and saving for the baby’s arrival.

If you are like me, with a huge loving family ~ you will get a lot of the things you need for your new bundle of joy at your baby showers and from people wanting to help you get started on the right foot.  But I’m learning quickly that it’s not the case for all mom’s.  Heck, some first time mom’s get no baby shower and hardly any support at all.  They are then forced to burden the entire $8-15k that baby’s first year entails.  OUCH.

Again as you have learned by now, I am all about helping my readers find true financial freedom.  So this was something that just could not be ignored.  And thus, here are some tips for saving big so that you can have that time at home with your little one guilt free, without adding any additional debt to your home.

  1. Find free, or next to free items.  Whether you need maternity clothes, a bassinet, a crib, clothes for baby, blankets, toys ~ there are tons of ways to find these items as hand me downs.  Check with the women at your church, Craigslist, Freecycle.org, StorkBrokers.com, neighbors etc.  Then, when you no longer need the items, pay it forward.  Find another mom in need and send the items her way.  A huge hint: don’t be too proud.  I’ve learned that by driving to some of the nicer parts of the city and checking out their Goodwill or thrift stores, I can find some MAJOR SCORES with the price tags still on them.
  2. If your nesting is anything like mine, you’re going through every day and cleaning up different things trying to make room for your LO.  Get rid of that crap!  Have a community yard sale coming up?  Use it to your advantage.  Throw it up on Craigslist.  Donate it for a tax write off.  Find a way to profit from the “stuff” you simply won’t have room for once the crib, dresser, changing table, bassinet, toy box, rocking chair (see where I’m going with this?) arrive!
  3. Coupons!  If you are anything like my DH, this idea mortifies you.  I will say it again.  Don’t be too proud.  I’ve included a link to a Facebook page that I have found very helpful for finding freebies. 
    • I am by no means an extreme couponer.  Honestly, most of my money savings comes from reading my weekly flyer and planning my meals around what’s on sale.  My grocery bill for two weeks (for two people) is approximately $100 but I almost always have $40 or more that I saved…  So $140 in product, for $100 for taking five minutes of my day read a flyer before doing my grocery shopping.
    • Take a chill on the eating out.  If you’re like most people I know, you’re eating out 2-4 times a week.  And honestly, this doesn’t include you or your DH going out to lunch with the coworkers!  Let’s say you both go out to lunch twice a week, and have dinner together at a restaurant twice a week…  $9 per lunch = $36 per week, $45 (yes, I used a conservative number) per dinner = $90 per week.  That’s $126 per week in eating out.  More than two times my grocery budget for two people.  If you really can’t give this up ~ there are so many chain restaurants that have deals like “2 for $20” or “kids eat free” on X night of the week.  Again, this is where coupons come in.  Join the mailing list (especially for Ruby Tuesdays) and get great coupons often resulting in 50% off one meal with the purchase of two entrees, sometimes even BOGO.  This can save you huge!
    • Sign up for mailing lists for your favorite clothing stores as well.  Motherhood maternity has great deals constantly so find your favorite maternity and baby clothing stores and get signed up.
  4. Co-Op.  I have strongly been considering starting a baby sitting co-op in my neighborhood to save on the expense of a sitter once it’s time for Mommy & Daddy to start having date nights.  Find options like this and check your local city’s calendar for free things to do in your area.  Your life doesn’t have to end, it’s just an adjustment.

Just Half of One? Please?

For the most part, I have been very lucky in that I haven’t been struggling too much with food cravings.  However ~ every once in a while I will get the worst craving in the WORLD for something that I know that I can’t have.  And usually when I want one thing I can’t have?  I want them all.  So yes, I would like a spicy tuna roll, with a wood chuck, and some hot dogs stuffed with cheese and wrapped up in a crescent roll with a side of ramen noodles.  PLEASE?!

I don’t know about the rest of you pregnant ladies out there, but my husband is an absolute stickler when it comes to these things.  That being said, in the beginning, when he felt I wasn’t gaining enough weight (who made him the doctor?) he was all about loading me up with potato chips, ice cream and the like.

At our last visit, I was very proud that I had only gained 3 pounds ~ putting me at a total of 13 lbs. gained thus far.  This was right at 22 weeks and it had been a month in between visits.  Go me.  Here’s to hoping I can keep that trend and only gain the other 12 lbs. I’m shooting for because let’s be honest, nobody wants to hit that 200 lb. mark for the first time in their life……….

On another note, now that baby shower invitations have started pouring into homes, Maggie and I are receiving our first wave of gifts.  Do you have any idea how exciting that is?  You know it’s bad when you’re jumping for joy after receiving a $40 Wal Mart gift card.  Hey, I hear we will go through a LOT of diapers this winter.

I’m going to hop in the shower and pick up my groceries but when I come back: expect another blog with a bit more substance.  Hope that you all had a fantastic week and have some great things coming up for the first week of May.

Nesting ~ A Planner’s Wet Dream

For those of you who know me, you’ll be inclined to agree that I take planning to a whole new level.  For those of you who don’t?  Well you’re about to find out.  Have I thanked you all for reading this lately?  Thanks a bunch!

So let’s dive in.  I seriously can think of a dozen women that I know off the top of my head that are pregnant right now.  I don’t know if you always know everybody who is pregnant, and you just don’t notice it when you’re not pregnant…  But one thing that I have definitely noticed is I am truly a planner.

My registry was started at 14 weeks.  My nursery theme has been picked out since before then.  My baby girl’s name has been picked out for…  years.  My baby shower dates have been set for months, heck ~ I’ve already sent a Facebook invite to my friends for my July shower.  Yes, I realize that it’s still April ~ however I’m missing your point completely.  I like to plan my life well in advance, and therefore give everyone else the opportunity to do the same.  Where was I…  Ahh, yes.

So in my dealings with these other pregnant women in my life, I’m always getting the “isn’t it a bit early to be doing that?” look.  When I’m like…  What do you MEAN you haven’t started preparing the nursery yet?  Interviewing daycares?  Pediatricians?  *SCOFF*

The fact of the matter is, I just want to be as ready as I physically can be because I’m a crazy stressed out monkey on a daily basis.  I don’t need any surprises to make things even worse!  Let’s not even get started on the fact that I am going to do all I can to ensure that my LO’s OCD (Obsessive Compulsive Disorder) is no where near as serious as mine!

But I wanted to share with you a few things that I am doing to make things a bit more… streamlined.

A.) Yes, I know that somebody else throws the baby shower.  But why does that mean I can’t get involved?  For just 50 cents an invitation I created invitations and mailed them to my mother to send out.  I love my mother, but I’m pretty sure if I hadn’t one of two things would have happened.

1.) She would have spent $3 an invitation to have someone else do them.

2.) I would have wound up with those hand written fill in the blank invitations.

B.) I am creating a packet of information for the people that I am allowing to come visit us in the hospital AFTER the baby is born.  It’s got some simple instructions along with the times that we will be allowing visitors as the hospital stated that they don’t really enforce visiting hours on the L&D floor.  EFF THAT NONSENSE!  It also has directions, parking information, what they’ll need to bring with them, etc.

C.) We have primed the nursery and will be putting the base coat on early next month.  Then we will be having a friend come in to add some hand painted jungle animals to the theme so that we can get all of the furniture in as it arrives.  I truly hope to have the nursery 90% complete no later than a week after my third and final baby shower.  This will give me a month and a half to prepare the rest of the house.

Some of the other things I’m doing include crocheting ~ not just for Grandma’s anymore, reading all those baby books graciously piling up, and trying to keep scary thoughts of the big day out of my head.  That’s all for now.  Again, I told you there would be some ranting.  Hope you all have a great week!

Pregnancy Dreams… Murder Preps Me for Motherhood?

I don’t know about the rest of you millions of women who have gone through pregnancy, but I am having the craziest dreams!  Last night, when I woke up believing that a friend had passed away, I decided that it was the final straw.  I needed to read some articles.

What I found was that these dreams are not only normal, but they are in fact our subconscious trying to prepare us for the trials ahead in our journey towards motherhood…  What?  I kept coming across all of these posts where it talks about women having dreams about their cravings, or animals that get bigger as your pregnancy progresses…  So why am I only having the mind numbingly terrifying dreams?

You know, the ones where I’m not myself and getting shot at from a patio while I’m completely clothed in a swimming pool?  And where my friends die, and my DH is with another woman and doesn’t recognize me at all when in passing?  How is this supposed to help me prep for motherhood?  Isn’t is bad enough that I can’t stay comfortable long enough to truly get a good night’s sleep to begin with?

So anyway, if you were wondering ~ there is your answer.  Those crazy pickle chasing dreams are completely normal.  Try not to let it get to you.

Chicken Lo Mein–Without the Delivery Driver

Alright, so I promised some simple recipes.  Are you ready to learn how to make a delicious version of chicken lo mein in the comfort of your own home, in under 30 minutes, with no delivery driver?  Good.  So let’s dive in.  Keep in mind that right now it’s just me and the DH so most of my recipes feed two heavy eaters.  You may need to adjust accordingly.

Ingredients:

1 boneless, skinless chicken breast ~ diced

1/2 an onion, then cut into 8 sections

2 servings of fettuccini noodles

1/2 cup chicken broth (I always use bouillon cubes)

6 tbsp soy sauce

2 tbsp brown sugar

2 cups assorted chopped vegetables (I typically use carrots, zucchini, red bell pepper)

In a sauce pan, get the water boiling for your fettuccini noodles.  The rest of the dish will take no longer than the 12 minutes it takes to cook the noodles, providing you’ve done the prep work.  Add the noodles, set a timer for 12 minutes, and get to work on the rest of the dish.

Mix the chicken broth, brown sugar, and soy sauce together.  Set aside.

In a hot skillet pan with 2-3 tbsp of olive oil add the chicken and the onions.  Cook the chicken for two minutes to ensure that the pink is gone from the outside of the chicken.  Now add the vegetables.  At this point you can add salt and pepper to the pan if you’d like.  Cook vegetables for five minutes in the chicken mixture (remember, 7 minutes of your 12 minutes have now passed).  Then add the chicken broth & soy sauce mixture to the skillet.  Simmer for the remaining five minutes.

At this point, drain your pasta and add it to your skillet mixture, coating the noodles in the sauce.  It’s ready to serve.  Enjoy!

Dave Ramsey & His Baby Steps to Financial Freedom (1-3)

Now that you’re working on that budget, (please read my post on budgeting 101 before proceeding) let’s go ahead and touch briefly on a great man who helps millions reach their financial goals via radio, books, live events and his online website.  For those of you who have no idea who Dave Ramsey is and care to find out you can learn about him here.

Here’s what I love about Dave Ramsey’s 7 baby steps to financial freedom and why most of my advice to you will be based off of his ~ he doesn’t just give you a solution for getting out of debt.  He is giving you a solution to a new way of life that allows you to save for emergencies, your future, and have NO monthly payments.  I mean it.  The last step includes getting all that extra money you saved because you’ve paid off all your debts and turning it into your dissolving that mortgage payment.  But I am clearly getting ahead of myself.

So now that you have a budget, and it includes socking money aside every month, let’s get started:

Baby Step #1:

Some of you may already have this accomplished.  The first goal whether it will take you 3 months or 12 based on your budget, is to sock $1,000 away into a savings account that is to be used as an emergency fund.  Let me be clear.  Unless an emergency occurs, this is money that should not be touched while you’re working on the other steps.  It should not be used for non emergency home improvements, tinting your windows because you “have the funds” or anything of the sort.  It should go into an account not to be thought of again until that dreaded emergency hits.  And we all know that Murphy’s Law says that emergency will hit.  This sounds simple enough, right?  Great.  Let’s move on to step #2.

Baby Step #2:

Pay off ALL debt.  What?  All of it.  Yes, all of it.  Dave Ramsey refers to this method as using a snowball to eliminate all of your debt so that you can have true financial freedom.  Yes, this sounds a bit more complicated.  So I’m copying, pasting AND citing!  LOL.

“List your debts, excluding the house, in order. The smallest balance should be your number one priority. Don’t worry about interest rates unless two debts have similar payoffs. If that’s the case, then list the higher interest rate debt first.

The point of the debt snowball is simply this: You need some quick wins in order to stay pumped up about getting out of debt! Paying off debt is not always about math. It’s about motivation. Personal finance is 20% head knowledge and 80% behavior. When you start knocking off the easier debts, you will see results and you will stay motivated to dump your debt.” ~http://www.daveramsey.com/new/baby-step-2/

Are you wondering how to do this?  In my opinion I really feel like this is why it’s step 2 and not step 3.  You’ve got your emergency fund, so as I stated before you’ll LEAVE THAT MONEY ALONE but if you don’t have other ways to bring in the income, or adjust your budget?  I would suggest using what you’ve been allocating towards savings, and allocate it towards your snowball.  If you’ve been putting $300 a month into your savings, and you have a couple of small $300 bills?  You’re paying off a new bill each month!  Wouldn’t that be great?  And think about how it will impact your credit if that is an issue.  I promise from personal experience, it feels amazing.  On to #3.

Baby Step #3:

The next step is all about truly building an emergency fund.  What would happen if you or your spouse lost your income?  At today’s date (April 27, 2012) it takes 6-10 weeks just to be deemed eligible for unemployment in the state of North Carolina.  You’re already planning on living on a tighter budget, and the money isn’t going to be retroactively paid.  Now that you’ve got your debts paid off, it’s about saving 3 to 6 months of your operating expenses.

What does that look like?  Well, fortunately by now you have a budget that’s pretty accurate.  So you really just need to bust that out and decide whether you want to save 3x that amount or 6x that amount.  And in my opinion, because you’re out of debt, what’s the harm in socking 6x that amount?  I didn’t see anything wrong with it either.

Here’s the fun part, if you’ve paid off monthly payments that were included in your budget while you were doing step #1, now you’ve got the money (let’s say the $300) you were socking into savings, AND the money on any of those payments you were still making on time to go towards this.  It makes it a quick and painless process because you’ve already been allocating that money, so you don’t miss it.  And that’s why it’s so important to allocate every dollar you receive on a monthly basis.

I’m going to take a break from the steps for now and leave you with some personal advice.  As I stated in my budget post ~ while you’re working through this process you need to be able to reward yourself.  If you have to cut back on your cable and only keep the Netflix and the internet?  Don’t cut out your entertainment budget completely.  Go out (within your means) and celebrate with dinner when you get a ticket item knocked off your list.  It really does help.

Also, one thing that I always recommend that I haven’t seen touched on in the 7 baby steps is a separate savings account for those “not if but when” automobile expenses.  I sock aside money every month and put it into a separate savings account that is only for my vehicle.  This way when I need to pay my car tax, or replace the tires, change the breaks or register my vehicle?  I’m not looking for the money.  They’re yearly or bi-yearly expenses that we know are coming.  Why not have something a little extra set aside in case the radiator breaks?

Another thing to add to this ~ I like having newer vehicles.  So when I don’t have a car payment?  I continue to pay that savings account the car payment I was making so that when it’s time to upgrade, I have a nice chunk of down payment that comes from no other savings funds to purchase the new vehicle that I need.  This is what makes me less of a person than Dave…  haha, it most likely will be more of a want than a need.

Cooking Made Easy ~ Grilling Lesson

I remember what life was like when we first got married.  Hamburger Helper, Banquet Chicken, Mashed Potatoes out of a box.  This was our life.  The fanciest I ever got was tuna noodle casserole or the occasional meatloaf ~ again, with instant potatoes.  So imagine how frustrating it is now, knowing that I can make better quality, better tasting meals in half the time?

I believe it takes somewhere around 50 minutes to an hour to cook banquet chicken in the oven.  I don’t know about you, but I will take a boneless skinless breaded chicken breast pan fried to crispy deliciousness over frozen dry chicken any day of the week.  This is where I come in.  To provide you with great ways to try things that are quick and easy.

Since it’s the end of April and in most cases grilling season is already upon us, let’s start with an all on the grill, limited dishes, everything is finished at the same time approach.

Let’s say you want to cook some chicken, steak, or burgers on the grill.  Throw some olive oil, garlic salt, pepper, parsley and Italian seasoning in a bowl.  None of these have to be fresh, they can all come from McCormick, Mrs. Dash, whoever you so choose.  You’ve just made a marinade.  I know, a marinade in 30 seconds that tastes way better than dressing?

Now let’s put that marinade to work…  Get some potatoes.  Chop up 1 1/2 potatoes for each person you’re serving.  You can cube them, slice them, cut them into long steak fry types, whatever your fancy.  Now toss those in your olive oil mixture.  What?  Yes.  Just do it.

Now break out your aluminum foil.  Make a packet, placing your potatoes in and wrapping them up.  I always double wrap them so that you don’t get any olive oil leaking into your grill for a big mess.  Now those are ready to be thrown on the grill.  Now throw your steaks or chicken in the same bowl and let those marinate while you’re doing something for a vegetable.

I love my vegetables two ways, steamed or grilled.  If you don’t already have these amazing products, I highly suggest you check them out.  Yes, I’ve even provided links.  I am a Pampered Chef junky, but I’m sure you can find different versions of either item on line or in your local store.

If you would like some steamed broccoli to go with this meal, get your chicken/steak and potatoes on the grill.  Come back in, chop up your broccoli, and throw it in your vegetable steamer (The best $11 I ever spent) with some water.  The broccoli will take 12 minutes in the microwave.  When it’s done, you can just drain it and eat it plan or throw some dried garlic and butter in the container and shake it up.  Again, no need for fresh herbs here.  Garlic stored in your fridge pre cut or dried and in your pantry will work just fine.

If you want to cut up some squash, zucchini and onions and throw them in your grill basket (found here) after tossing them in some Italian dressing, or that marinade that you made?  They can go on the grill at the same time as everything else.  Just make sure you’re stirring them so they’re cooked evenly.

LIMIT YOUR FLIPPING.  Half way through cooking your steak/chicken flip your meat AND your potatoes.  They’ll be done at the same time and you’ll have nothing to do but throw away the aluminum foil.

So hopefully that sounded as easy as it is.  You’re really prepped, cooked and eating in 30 minutes.  Just don’t forget to warm up your grill while you’re prepping your potatoes.
