Now that I’m home all day and left to my own devices ~ you would think it would be easier to plan out meals. It’s actually gotten more difficult. Though it may just be the fact that I can NEVER DECIDE what it is I want to eat. And therefore I have implemented taco Tuesday. And in celebration: I’m sharing some of my favorite recipes with you.
We all know and love a basic taco… So here goes:
Taco shells (the kind you toast in the oven)
One lb. Ground Beef
Roma tomatoes (diced)
Shredded Lettuce
Mexican Style Cheese
One Packet Taco Mix
Simple enough, right? Exactly. I always get my veggies ready while I’m browning the beef. Then you add the water and seasoning as directed on the packet (your shells should be toasting this whole time) and voila! Serve. Quick, easy and deeelicious.
Warning ~ If your DH (Dear Husband) loves tacos as much as mine does… one lb. of ground beef may literally only be enough for the two of you. So adjust based on your family size.
Who doesn’t love a nice hot soup on a dreary or rainy day? I have the simplest taco soup recipe and it’s absolutely amazing:
One lb. Ground Beef
2 cans kidney beans
1 can diced tomatoes
One Packet Taco Mix
1 cup of rice
tortilla strips, mexican cheese, chives and sour cream (if that’s your thing) to garnish.
In a pot combine 2 cans kidney beans, 1 can diced tomatoes, one packet taco mix and three cups of water. Turn on low.
Brown your ground beef. Add to your pot. If you’ve read my previous posts ~ you know I like to cheat. So here it comes again. With the Pampered Chef Rice Cooker I cook 1 cup of rice while I’m bringing my soup to a boil, and simmering.
That’s all there is to it. Put some rice in the bottom of a bowl, add your soup on top then garnish.
Next week I will be giving turkey fajitas a try. You guessed it, simply frying up some turkey, peppers and onions ~ throwing some flour tortillas in the oven to heat up and serving with some type of bean, lettuce, tomato and cheese! Have I mentioned my husband LOVES cheese and tacos? I’ll talk to y’all soon!
